Brian Bennett starts his career in the restaurant industry at Chevys Fresh Mex
When Chevys Fresh Mex sold, Brian thought he would retire back in his home town of Rocklin, California. But he set his sights on a different restaurant concept.
Brian co-founded Paul Martin's with partner, Paul Fleming, emphasizing high-quality food and exceptional dining experiences. The brand expanded to eleven locations from California to Arizona and Texas, and achieved an annual revenue of $62 million.
Brian Bennett took a year off before working with his wife, Susan, on a vision for a new restaurant. They wanted a relaxed, comfortable atmosphere where friends could gather and eat delicious food with great wine. The Bennett's carefully curated a menu to include all the foods they love to eat, including foods Susan liked, which were gluten-free and vegetarian. The COVID pandemic disrupted many lives and businesses, including the Bennett family. The Bennett's daughter, Margaux, was studying wine and viticulture at Cal Poly when the school shut down. She came home and started working in the restaurant with her parents. The Bennett's had to lay off all their employees, and the family cranked out to-go orders offered curbside to remain in business. However, in response to the shutdown, Susan Bennett developed thirteen different family meal options to feed four that were delicious and affordable, making it easier for families who didn't cook to enjoy a quality meal during the shutdown.
Inspired by a friend's love for a salad no longer available at the former Banderas restaurant, the Bennett family toured the Sacramento location and knew it was the perfect spot to expand. They opened Bennett's American Cooking and Susan recreated the "Missing In Action" salad with locally sourced ingredients and the MIA Salad has quickly become a favorite among regulars.
